Happy, Healthy Living!

 Check out my home cooked capsicum and salmon muffiny-things! I made them for the girls to take to school in their lunch boxes. I freeze them and they just pop 3 or 4 in their lunch and they defrost by lunch time. I modified a recipe for fritters and created these! Here's the recipe:

Healthy Yummy Lunch Muffins

1 1/2 cups SRF
1 cup milk
4 or 5 eggs
chopped capsicum, spring onions and carrots
tin of salmon
salt and pepper
cheddar cheese
Mix dry ingredients. Mix wet ingredients. Put in as much cheese, salmon and vegies as you like. Mix all together. Put into greased muffin tray and bake in oven 180 degrees for about 8 minutes.





Here is my partner in all home activities. Scruffy. He happily patters around after me as I do my bits and pieces. He is always there with a listening ear and ready for a cuddle if needed.
Finally, here's my lunch, cuppa and a copy of Designer Knitting (aka vogue knitting). Ahhh! Lovely! I'm still knitting the triangular shawl but found a pair of beautiful socks I knitted my youngest(in the bottom of her very messy cupboard). I forgot what a fabulous colour they are and how much I loved knitting with Colinette Jitterbug wool, so I'm going to get some more and start another pair of groovy socks!

    I'm knitting my first triangular shawl it called Multnomah. I'm up to the feather and fan bit.
