Healthy Yummy Lunch Muffins
1 1/2 cups SRF
1 cup milk
4 or 5 eggs
chopped capsicum, spring onions and carrots
tin of salmon
salt and pepper
Mix dry ingredients. Mix wet ingredients. Put in as much cheese, salmon and vegies as you like. Mix all together. Put into greased muffin tray and bake in oven 180 degrees for about 8 minutes.
Ok, so the kids are back at school (thank goodness), I have been eating soylinseed bread with smoked salmon, basil and tomato sandwiches (from the garden). I have severe rheumatoid arthritis so I try to eat a lot of oily fish for the omega 3s for my joints. I've also been making lemon drizzle cake for afternoon tea for the girls after school sometimes.
Here is my partner in all home activities. Scruffy. He happily patters around after me as I do my bits and pieces. He is always there with a listening ear and ready for a cuddle if needed.
